Cookies for Breakfast?!

Hola!  How's everyone doing? 

Last night my sweet tooth kicked in after dinner, so I made a "dessert" inspired by The Fitnessista.  (If you haven't noticed, she's kind of my blog guru.) 

"Baked" apple.

I just cut up an apple, put a bit of butter on top, sprinkled with a lot of cinnamon and a little bit of stevia, and microwaved it for about 2 minutes.  Then I topped it with some Greek yogurt and devoured it!

Before I went to bed last night, I made my breakfast for this morning.  Shocker, another Fitnessista-inspired creation:  a breakfast cookie!  


I mashed up a banana, added 1/3 cup old-fashioned oats, about a tablespoon of sunflower seed butter, 1 T chia seeds, a splash of almond milk, slivered almonds, lots of cinnamon, mixed it all together and added some goji berries on top.  I don't use protein powder like The Fitnessista does (I use chia seeds or ground flax seed instead), and I use a whole banana instead of 1/2.  With the extra banana, it's plenty sweet for me, so I don't add any stevia or other sweetener.  The mixture is actually supposed to be spread out onto a plate to make it more like a cookie, but since I don't have a dishwasher I try to limit the amount of dishes I have to wash, so I just smooth it out in the bowl I mixed everything in. 
 

 I covered it with saran wrap and put in the fridge over night.


And breakfast was ready for me when I woke up this morning!  That definitely makes it a lot easier to get out of bed and start my day.  After I enjoyed a "cookie" for breakfast, I headed to the gym for some cardio machines and Live! with Kelly.

Michael Strahan was Kelly's guest co-host today and he was really funny.  I'm sure people at the gym think I'm nuts because I'm constantly smiling and laughing to myself while I'm on the cardio machines.  Awkward moment:  there was a woman weighing herself on the scale and I was waiting for her to finish so I could get on.  I was feeling a little impatient because she was taking awhile to remove her jacket while she was on the scale.  After she got off and was walking past me, she said to me, "Cool, that was a pound!"  And I replied, "Wow, that's exciting!" thinking she meant she had lost a pound... then I realized she meant her jacket had weighed a pound.  Um, yeah, very exciting that your jacket weighs a pound... woops!

After a meeting, a couple of classes, and a quick trip to the grocery store, I'm home for the night and sleepy.  Time to wake up, eat some dinner, and work on that writing assignment!  See ya later!

The view from my apartment this afternoon.  You can see Lake Erie in the distance (that dark area just beyond the treetops).  I'm excited because the days are staying light longer, but I'm ready for the breathtaking sunsets I get to see in the summer and early fall!
