Pop Pop Pop That Thing

Bonjour mes amis!  How's it going?  Today has been a scorcher here!

I started off the day with my circuit workout at the gym, but I decided not to do any cardio afterwards like I normally do.  It's so warm and sunny out and I'm hoping to go on a walk this evening to take advantage of it.

This warm weather is the perfect time for a new popsicle recipe!  (You can find my other popsicle recipe here.)

I bought a HUGE container of strawberries last week and some of them are starting to get too ripe, so I thought that making popsicles would be a great way to put them to good use.

Into the blender:  1/2 cup plain yogurt, 1/2 cup cottage cheese, 1 cup hulled strawberries, and 2 packets of stevia.  I know cottage cheese in a popsicle sounds kind of strange, but it's a great boost of protein and you really can't taste it when it's blended up with everything else - I hate plain cottage cheese, so you can take my word for it!

You could also use frozen strawberries if you prefer, and alternate sweeteners like honey, agave, or maple syrup could be used instead of stevia.  I would recommend about 2 T if you're using a liquid sweetener.

When it's all blended up, pour into a popsicle mold.  Alternatively, you could use little cups, cover them with foil, then put popsicle sticks through the foil (the foil just keeps the sticks in place).

Stick them in the freezer for at least a few hours before digging in.  Then cool down with one on a hot day!

And pretend like you have a balcony by standing next to your open window.

I would be excited that it's almost the weekend... but weekends are just like any other day during exam time :(  But I hope you have something fun planned!  Catch ya on the flip side.  (<-- Is that even a phrase?  What are the kids saying these days?)
