Breakfast Is Served

As I've mentioned before, I'm a huge fan of having breakfast ready when I wake up in the morning and love making breakfast cookies and apple cinnamon steel-cut oatmeal.  Another way to prepare breakfast ahead of time is with overnight oats.  I got the idea from Kath to make overnight oats in an almost-empty nut butter container.  I've never looked forward to finishing a jar of nut butter so much!


This past week, I happened to be almost finished with a jar of sunflower seed butter and a container of peanut butter.  One night, I made overnight oats in the sunflower seed butter container using 1/3 cup old-fashioned oats (NOT cooked), enough rice milk to cover the oats, a big dollop of Greek yogurt, 1 T chia seeds (this really helps to thicken the mixture), raisins, cinnamon, and slivered almonds.  I added all of those to the jar, mixed them up, and popped the jar in the fridge overnight.


When I woke up, breakfast was served!  This was really filling and kept me full until lunch.


Another night, I made overnight oats in my almost-empty peanut butter container (it was a really big container, it doesn't look like it, but there was actually a good amount of oatmeal in there), by adding 1/3 cup old-fashioned oats (NOT cooked), enough rice milk to cover the oats, a big dollop of Greek yogurt, 1 T chia seeds, raisins, chopped walnuts, a splash of vanilla extract, and a pinch of sea salt, mixing that all together, and refrigerating overnight.  In the morning I added some fresh strawberries - delicious!

Yesterday after my workout, I made a protein smoothie around 5 or so, which meant I wasn't very hungry at dinnertime.  I have some broccoli and grape tomatoes which need to be eaten up soon, so I decided to roast up a bunch of veggies for a nutritious but lighter meal.


I cut up a zucchini to add to the broccoli and tomatoes, and tossed them with olive oil, dried oregano, a tiny bit of red pepper flakes (I can't handle spicy food at all, so I went really light with these), and sea salt.  I roasted them at 425* for 20 minutes, stirring and flipping after 10 minutes.


Beeeyoootiful.


Served with some warmed-up pasta sauce on the side for dipping.  Yum!


While I was in the kitchen, I kept running back and forth to the window to enjoy the sunset.


It was a good one.


I'm still loving this weather.  The flowering trees and the hint of green leaves popping out just make my heart happy.  I'm not sure Ohio has EVER had weather like this - it's been sunny and around 80 the entire week, with low humidity and no rain.  I love it, but there's no way it will last - now that it's the weekend, I'm sure it'll cool down and get gray and rainy.

I had to go downtown today, unfortunately not to visit the Rock Hall, though.


But I parked close by!  Haha.


Browns stadium was also close by - I've never actually been there, though!

This afternoon I went to the gym for some cardio and did the elliptical while watching Hot Chick - have you seen that movie?  I forgot how funny it is!  I wish I could have watched the whole thing; it was cracking me up.  And I finally tried something I've been thinking about since... umm... freshman year of undergrad.  (I can be a little hesitant to try new things, can you tell?)  Anyways, I used the rowing machine!  And it was really awesome; I can't believe I waited so long to try it out.  I'll definitely be adding it into my cardio rotation.

"Do the Panic" by Phantom Planet.  Since they're my favorite band, it's about time I put one of their songs on here.  They're most well-known for their song "California" (i.e. the theme song for the show The O.C.).  Unfortunately they went on a "hiatus" (code for broke up) in 2008, but they're doing a couple of reunion shows in California this summer.  I'm really, really, really hoping they go on tour, even if it's a mini one!  I NEED to see them again.
