Healthy Homemade Popsicles

Hola peeps.  How's your weekend going so far?

With the warm weather, I was craving POPSICLES!  I thought about stopping by the store and picking up a frozen treat earlier this week, but then I remembered that I bought a handy dandy popsicle mold last summer and had yet to use it.  So, these popsicles were born.  I was inspired by the yogurt pop I had in NYC last week.  They're very simple, and you can make them without a popsicle mold, too!


Into the blender:  1 1/2 cups Greek yogurt, a heaping cup of frozen mixed berries, and 2 T honey.  That's it!  Blend until smooth.  The recipe is easily adaptable, too - you can substitute any type of yogurt for Greek yogurt, you can use different berries (fresh or frozen), and/or your choice of sweetener (agave, maple syrup, etc.).


After blending, pour the mixture into the popsicle mold.  If you don't have a mold, you can pour the mixture into individual cups, cover with foil, then stick popsicle sticks through the foil (the foil keeps the sticks upright while they're freezing).  And you can always use a spoon or something similar in place of popsicle sticks.


Ready to go in the freezer!  Mine were frozen after about 4 hours.  When you're ready to eat them, it helps to run some warm water over the mold for a little while in order to release the popsicle from the mold (same goes if you use cups).


So tasty!  And I love the bottom of my popsicle mold - not only does it protect my hands (and couch, haha) from drips, but there's a little straw so you can enjoy every last drop!


I had some leftover fruit and yogurt mixture after I filled my popsicle mold, so I decided to make a protein smoothie.  I added some more Greek yogurt, a scoop of Sun Warrior vanilla protein powder, a few frozen strawberries, some frozen pineapple, rice milk, some water to thin it out, and 2 ice cubes after everything was blended together.


Delicious and the perfect post-gym treat; plenty of protein from the powder and the Greek yogurt.


And it looks like a good old-fashioned strawberry milkshake!

Reader question:  What's your favorite frozen treat?  I don't even know if I could pick just one - I love ice cream sandwiches, fudgsicles, and obviously ice cream :)  I might have to work on a healthy homemade fudgsicle recipe after Lent.

    2) I love that you just plopped in some protein powder afterwards and made a smoothie! I would have probably done something similar! I hate hate hate wasting food!

    1. Haha, I had such grand plans when I bought my popsicle mold last summer, but it took me awhile to finally break it out :) Yes, I HATE wasting food, too! I'm so glad you like the song! I have two albums by Miniature Tigers ("Fortress" and "Tell It to the Volcano") and would recommend them both; they're great for summer. Happy Sunday to you, too!
